This is a flexible sugar-free milkshake recipe built around sugar-free vanilla ice cream plus almond milk, with easy variations for vanilla, coffee, or chocolate.

Ingredients

  • 2 Tbsp low-carb sugar substitute or about 15 drops liquid stevia

  • 1 ½ cups crushed ice

  • 1 cup sugar-free vanilla ice cream (store-bought)

  • ½ cup unsweetened almond milk

  • 1 heaping tsp instant espresso powder (optional, for coffee or mocha flavor)

  • 2 tsp cocoa powder (optional, for chocolate or mocha flavor)

  • ½ tsp vanilla extract (optional, for extra vanilla flavor)

Directions

  1. Add ingredients to blender

    • Place crushed ice, sugar-free vanilla ice cream, almond milk, sweetener, and any flavor add-ins (espresso powder, cocoa, vanilla) into your blender.

  2. Blend

    • Blend on high until the mixture is thick, smooth, and creamy. If your blender struggles with ice, use crushed ice or pulse longer.

  3. Adjust texture

    • For a thicker milkshake: add more ice cream and/or ice and blend again.

    • For a thinner shake: add a little more almond milk and blend briefly.

  4. Serve

    • Pour into 1–2 tall glasses.

    • Top with unsweetened or sugar-free whipped cream if desired.

  5. Enjoy right away

    • Best enjoyed immediately; the texture changes as it melts.

Flavor ideas:

  • Vanilla: Use vanilla extract, skip the cocoa and espresso.

  • Coffee: Use espresso powder + vanilla, skip cocoa.

  • Mocha: Use both cocoa and espresso powder.
